Ingredients

chicken thighs 2 large, boneless
salt pinch
MSG (optional) pinch
light soy sauce 1 tablespoon
dark soy sauce ½ tablespoon
green onions 2 stalks, chopped
ginger 1 inch, julienned

Prepare the chicken

Remove bones from chicken thighs if needed. Rinse well and pat completely dry with paper towels. This helps the marinade stick and ensures crispy skin.

Make the marinade

In a bowl, combine salt, MSG, light soy sauce, and dark soy sauce. Add the julienned ginger and chopped green onions. Use your fingers to squeeze the scallion-ginger juice (onion and ginger juice) into the mixture

Marinate

Coat the chicken thighs evenly with the marinade. Let sit for at least 30 minutes, flipping halfway through. The longer it marinates, the more flavorful it gets.

Air fry

Place marinated chicken on the air fryer rack. Cook at 410°F (210°C) for 18 minutes, flipping once halfway through, until golden brown and cooked through.

Remove from air fryer and let rest for a couple minutes. Slice and serve hot with rice or your favorite sides.
