Almond paste/fondant flowers (Method 1)

Ingredients

Almond paste or fondant (colored) to taste
Caster sugar (for dusting to prevent sticking) to taste
Yellow piping jelly or jam (for filling the flower centers) to taste

Instructions

Preparation

Prepare a shallow tray and spread a layer of caster sugar on it.

Rolling out

Using the caster sugar as an anti-sticking dust, roll out the colored almond paste or fondant extremely thin.

Cutting

Use a small fluted cutter to cut out shapes and place them on the sugar layer.

Shaping

Use the round end of a spoon handle or a wooden dowel to press the center of each cut piece, forming a cup shape to resemble a half-open flower. If a crystal appearance is not required, use icing sugar as anti-sticking dust and press the shapes on a piece of styrofoam.

Filling

Once set, fill the centers with yellow piping jelly or jam, and garnish with glacé cherries.
