Almond Yam Balls

Sweet deep-fried dessert with a purple yam outer wrapper: the yam is steamed and kneaded, filled with sweet red bean paste, coated in almond bits, and fried.

Almond Yam Balls

Ingredients

Purple yam (peeled and cut into thick slices) 120 g
Sugar 20 g
Butter 15 g
Glutinous rice flour (add as needed based on moisture content) 50 g
Red bean paste 200 g
Slivered almonds 200 g

Instructions

Step 1

Peel the purple yam and cut into thick slices, steam in a steamer for about 30 minutes, remove and mash into a paste.

Add sugar and butter to the yam paste from Step 1 and knead until smooth. Add glutinous rice flour as needed based on the moisture content of the purple yam, until it no longer sticks to your hands, then the purple yam dough is ready. Set aside.

Step 3

Divide the purple yam dough from Step 2 into portions of 35 g each, then wrap each portion with 25 g of red bean paste. Repeat until all the ingredients are used up.

Wet your hands with water first, then roll the yam balls from Step 3 into round shapes, coat the outside with slivered almonds and set aside. Heat the oil to 150°C, slowly add the yam balls, fry until the surface turns golden brown, then remove and drain the excess oil.
