Ingredients

flaky pastry dough 500 g
French apples (Reinette), peeled, cored, and cut into thick slices 1.2 kg
lemon juice 1 lemon's worth
light brown sugar 3 tbsp
butter, for greasing the pan 20 g
ground cinnamon 1 tsp
ground ginger 1 tsp
ground nutmeg 1/2 tsp

Instructions

1

Prepare the Apples

Preheat the oven to 210°C. Peel the apples, cut each into 4 quarters, remove the cores, and cut the quarters into thick slices. Place them in a large bowl.

2

Season the Apples

Mix the brown sugar, cinnamon, ginger, and nutmeg in a small bowl, then sprinkle the mixture over the apples. Toss thoroughly so every slice is coated, and finish with the lemon juice.

3

Assemble the Pie Shell

Grease the pan. On a floured work surface, roll out 2/3 of the pastry dough with a rolling pin and ease it into the pan, allowing the edges to hang over the rim. Gently prick the base with a fork. Arrange the seasoned apple slices over the pastry.

4

Cover and Bake

Roll the remaining dough into a circle and place it over the apples. Carefully seal the 2 layers of pastry around the edge with your fingers. Cut a small hole in the center to allow steam to escape during baking. Bake at 210°C for about 35 minutes.

5

Serve

Serve the pie warm or at room temperature, accompanied by vanilla ice cream or whipped cream.
