Asparagus Lettuce with Mayonnaise Dressing
French-style cold tossed celtuce, tossed in a dressing made with mayonnaise and sesame oil. It has a crisp, tender texture, fresh aroma, and a savory, tangy, refreshing flavor.
Ingredients
Tender asparagus lettuce (peeled, roots removed, tender leaves kept; washed and cut into irregular chunks, tender leaves chopped)

Sesame oil (drizzled on at the end)

White vinegar (diluted with 3 times cold boiled water)

White pepper (seasoning)

Fine salt (for marinating)

Prepare the asparagus lettuce
Peel the asparagus lettuce, remove the roots, and keep the tender leaves. Wash thoroughly, then cut the stalks into irregular chunks and finely chop the tender leaves. Salt each part separately for 3 minutes, rinse clean in cool boiled water, and arrange on a plate.

Mix the dressing and toss
Place the white vinegar in a bowl and dilute it with 3 times its volume of cold boiled water. Stir in the mayonnaise and white pepper until smooth, then pour over the lettuce chunks and chopped leaves. Drizzle with sesame oil and serve immediately.
