Ingredients

Apples, plums, grapes and other fruits (cut plums and grapes into pieces, blanch apple pieces for 8 seconds) 300 g
Tomatoes, zucchini, peas, cucumbers and other vegetables (cut tomatoes into pieces, blanch zucchini pieces for 1.5 minutes, cook peas for 2 minutes, blanch cucumber cubes for no more than 30 seconds) 200 g
Salt 50 ~ 60 g
Water (boiled) 1000 ml
Fennel, Sichuan peppercorns, onion, minced garlic (pre-cook onion for 1 minute, cook minced garlic for 1 minute) to taste each

Instructions

1

Make the brine

Bring 1000 ml of water to a boil, add 50-60 g of salt, and stir until fully dissolved.

2

Bottle the ingredients

Place the spices, fennel, and Sichuan peppercorns on a strainer, soak them in the boiling brine for 1.5 minutes, then remove and place them into 3 clean jars. Next, place a small amount of plums, grapes, and diced tomatoes on top of the spices.

3

Process the vegetables and fruits

Pre-cook the onion for 1 minute, blanch the diced zucchini for 1.5 minutes, cook the fresh peas for 2 minutes, cook the minced garlic for 1 minute, blanch the cucumber cubes for no more than 30 seconds, and blanch the diced apples for 8 seconds. Then layer all the pre-cooked, processed fruits and vegetables on top of the plums, grapes and other fruits until the jar mouth is filled.

4

Fill and seal

Pour the boiling brine into the jars containing the ingredients while still hot, screw the lids on tightly, gently shake the jars, and serve once cooled.
