Baked Shrimp and Tofu with Melty Cheese

Story

This dish combines the delicate sweetness of shrimp with the comforting creaminess of tofu, finished with that irresistible melted cheese topping. It's inspired by Chinese cooking techniques but takes a page from Italian gratins.

Ingredients

large shrimp, peeled and deveined 200g
firm tofu, cut into thick slabs 300g
fresh shiitake mushrooms, sliced 100g
mozzarella cheese, shredded 100g
green onions, chopped 2 stalks
vegetable oil 1 tablespoon
salt to taste
white pepper a pinch

Instructions

Prepare the shrimp

Toss the peeled shrimp with a pinch of salt and white pepper. In a pot of boiling water, cook the shrimp for about 2 minutes until they turn pink. Drain and set aside.

Layer the base

Arrange the tofu slabs in a baking dish. Scatter the sliced shiitake mushrooms over and around the tofu. Top with the cooked shrimp, distributed evenly.

Add the cheese and bake

Sprinkle the shredded mozzarella generously over the top. Bake in a preheated 200°C (400°F) oven for 15-18 minutes until the cheese is melted, bubbly, and golden brown.

Finish and serve

Remove from oven, garnish with fresh green onions, and serve immediately while the cheese is still gooey.
