Banana Donuts
A dessert of bananas soaked in rum, coated in fermented batter, and deep-fried.

bread yeast
10 g
flour
250 g
oil
2 tbsp
bananas

fine granulated sugar
2 tbsp
rum
1/2 cup
powdered sugar
to taste
salt

Step 1
Dissolve the yeast in a small amount of warm water. Place the flour in a bowl, add the dissolved yeast, sprinkle in the salt while stirring, and gradually pour in about 3 cups of water. Knead until the dough is smooth, then add the oil. Cover with a cloth and let rest for 2 hours.

Peel the bananas, slice them in half lengthwise, and arrange them on a plate. Sprinkle with the fine granulated sugar, drizzle over the rum, and marinate for 1 hour.

Heat the frying oil. Thread the bananas onto long skewers, coat them evenly with the batter, and fry in the hot oil until golden brown.

Remove and place on paper towels to drain, sprinkle with powdered sugar, and serve.
