Banana Meat Patties

Ingredients

Lean meat (minced into a paste) 200g
Banana (peeled, split lengthwise into 3 strips, cut into diamond-shaped pieces) 1 piece
Eggs (beaten) 2
Fine salt 3 tsp
Cornstarch (for mixing and dusting) to taste
Shaoxing wine (for seasoning) 0.5 tbsp
Stock 0.5 tbsp
MSG (for seasoning) 1 tsp
Tomato ketchup (for seasoning) 1 tbsp
Sugar (for seasoning) 1 tbsp
White pepper (for seasoning) 2 tsp
Sesame oil 2 tsp
Vegetable oil (for deep-frying) 500g

Make the meat patties

Rinse the lean meat and mince into a paste. Mix with fine salt and beat until sticky, then add the eggs and cornstarch, stir well, and beat again until cohesive. Shape into balls about the size of a longan, flatten into round patties, steam until cooked through, and dust with cornstarch.

Fry the bananas

Peel the bananas, split each lengthwise into 3 strips, and cut into diamond-shaped pieces. Toss with the beaten egg and dust with cornstarch. Deep-fry in vegetable oil until firm, then drain and arrange around the edge of a serving plate.

Fry the patties and finish with sauce

Heat oil in a wok to about medium-low temperature and fry the meat patties until done, then drain in a large wire strainer. Using the remaining oil in the wok, splash in the Shaoxing wine and pour in the stock. Season with fine salt, MSG, sugar, and tomato ketchup, sprinkle in the white pepper, add the meat patties, and cover. When the sauce is nearly dry, drizzle in the sesame oil and toss to combine. Place the meat patties in the center of the plate.
