Beef and Shiitake Stir-Fry with Onion

Ingredients

beef slices 200g
onion 1 medium, sliced
shiitake mushrooms 4-5 mushrooms, sliced
fresh cilantro a handful, chopped
vegetable oil 1-2 tablespoons
black pepper and salt to taste
oyster sauce 1 tablespoon

Prep the vegetables

Slice the onion into thin strips. Cut the shiitake mushrooms into bite-sized slices. Roughly chop the fresh cilantro, keeping the stems and leaves separate.

Blanch the beef

Bring a pot of water to a gentle boil. Add the beef slices and let them cook just until they change color and any foam rises to the surface, about 1-2 minutes. Drain and set aside.

Stir-fry everything together

Heat oil in a wok or large skillet over medium-high heat. Add the onions and mushrooms, stirring frequently until they soften and develop some color, about 3-4 minutes. Add the blanched beef and season with black pepper and salt.

Finish and serve

Drizzle the oyster sauce over the pan and toss everything together until well coated. Add the cilantro in the last 30 seconds of cooking, stirring until just wilted. Serve immediately over steamed rice.
