Cook the beef mixture
Heat oil in a large skillet over medium-high heat. Add the diced onion and sauté until softened, about 3 minutes. Add the ground beef and cook, breaking it apart, until no longer pink—about 5 to 7 minutes.
Simmer with salsa and beans
Pour in the mild salsa and add the drained kidney beans. Crumble the beef stock cube into the pan, then add about ½ cup of hot water. Stir everything together, reduce heat to medium-low, cover, and let it simmer for 10 minutes so the flavors meld.
Assemble and bake
Preheat your oven to 375°F (190°C). Spread a generous layer of tortilla chips on a baking sheet. Spoon the beef and bean mixture evenly over the chips, then sprinkle the shredded cheese on top. Add a pinch of dried oregano. Bake for 8 to 10 minutes until the cheese is melted and bubbly.
Serve
Remove from the oven and let cool slightly. Add a dollop of sour cream on top and serve immediately while hot and cheesy.
