Mix the dough
Add water and milk to your bread machine bucket. Pour flour to cover the liquid surface. Place sugar in one corner and salt in the opposite corner. Make a small well in the center of the flour and add the yeast there—keep it dry and away from the corners. Drizzle olive oil over the top. Select the dough cycle and let the machine work its magic for about 90 minutes.
Prepare the durian
While the dough rises, carefully remove the seeds from the durian flesh. Mash the flesh with a fork until you have a spreadable consistency with some texture remaining. Set aside.
Shape the heart
Once the dough cycle finishes, punch down the dough and turn it onto a floured surface. Roll it into a rectangle about 25cm wide. Fold the two short sides toward the center to create a rounded heart silhouette, or simply shape it by hand into a generous heart mound about 2cm thick. Place on a parchment-lined baking sheet.
Add toppings and bake
Spread the mashed durian evenly over the surface, leaving a small border. Sprinkle the shredded mozzarella on top. Beat the egg lightly and brush the edges for a golden finish. Bake in a preheated 200°C (400°F) oven for 20-25 minutes until the crust is golden and the cheese has melted and started to bubble.
Serve warm
Remove from the oven and let cool for 2-3 minutes. Slice into wedges and serve immediately while the cheese is still stretchy.
