Beer-Braised Chopped Free-Range Chicken

Ingredients

free-range chicken 1/2
long red chili peppers 8
Thai chili peppers 3
garlic cloves 5
ginger 1
scallion 1
beer 1 can

Instructions

1

Step 1

Heat vegetable oil with ginger slices over high heat until fragrant.

2

Step 2

Add the chopped chicken pieces.

3

Step 3

Stir-fry over high heat.

4

Step 4

Continue stir-frying until the moisture from the chicken has evaporated, then add dark soy sauce for color.

5

Step 5

Stir-fry until the chicken turns golden, then transfer everything to a pressure cooker and pour in one can of beer.

6

Step 6

Add salt to taste, cover with the lid, and pressure-cook on high heat for 15 minutes. Since this is free-range chicken, it needs the full 15 minutes; for regular feed-raised chicken, 5 minutes is enough.

7

Step 7

The pressure-cooked chicken can be eaten as is at this point.

8

Step 8

Pour the contents into a pan and reduce the sauce over high heat, then add ginger slices and garlic cloves.

9

Step 9

Add the chopped red chili peppers and stir-fry over high heat; finish with a splash of aromatic vinegar just before serving.

10

Step 10

Sprinkle with chopped scallion. Free-range chicken has a firm, chewy texture and smells fantastic!
