Beer Duck

Clean the duck and chop it into pieces.

Prepare the other ingredients.
Step 3
Place the duck in a pot of cold water, add scallions, ginger slices, and a small amount of baijiu, and blanch for 2 minutes.
Step 4
Rinse the duck under cold water until clean, and prepare one can of beer.
Step 5
Heat oil in a wok over low heat, and add rock sugar to make a caramel glaze.
Step 6
The rock sugar turns a pale yellow color.
Step 7
Add the duck pieces and stir-fry evenly until fragrant.
Step 8
Add ginger, cinnamon bark, star anise, bay leaves, and dried tangerine peel, stir-fry until aromatic, then add the red chili peppers.

Add light soy sauce and stir-fry to coat and color the duck.

Pour in one can of beer so it just covers the duck.

Let it simmer briefly.

Transfer to an electric pressure cooker and cook under pressure for 20 minutes.

When the time is up, transfer everything back into a wok and add the garlic cloves.

Bring to a boil over high heat, fish out and remove the aromatics, and reduce the sauce until thickened.

Season with chicken essence, oyster sauce, and white pepper powder, then add the garlic sprouts.
