Black Bean Sauce Bitter Melon

Ingredients

bitter melon 500g
fermented black beans 1 tbsp
minced garlic to taste
sugar to taste
soy sauce to taste
salt to taste
chicken powder to taste
cornstarch slurry to taste

Step 1

Remove the stem end from the bitter melon, cut it in half lengthwise, scoop out the seeds and pith, then slice into thick pieces. Finely chop the fermented black beans.

Heat a wok over high heat with about 3 tbsp of oil until it reaches medium-hot. Add the bitter melon slices and pan-fry until golden brown on both sides. Pour in a generous half cup of water, then add the chicken powder, soy sauce, fermented black beans, salt, sugar, and minced garlic. Bring to a vigorous boil over high heat until the sauce reduces and thickens, then stir in the cornstarch slurry to finish and serve immediately.
