Black Walnut Wafers

Black Walnut Wafers

Ingredients

all-purpose white flour 1 1/2 cups
large eggs 2
baking soda 1/4 teaspoon
vanilla extract 1 teaspoon
unsalted butter (melted) 2 tablespoons (1/4 stick)
salt 1/8 teaspoon
packed light brown sugar Scant 1 cup
finely chopped black walnuts 2/3 cup (about 3 ounces)

Instructions

Preheat the Oven

Preheat the oven to 350°F. Line several baking sheets with aluminum foil. Grease the foil or spray with nonstick spray.

Mix Dry Ingredients

In a small bowl, whisk together the flour, baking soda, and salt thoroughly; set aside.

Mix Wet Ingredients and Dough

In a medium bowl, stir the brown sugar, eggs, and vanilla with a fork until completely blended. Stir in the melted butter and flour mixture, then the black walnuts, until evenly combined.

Shape

Drop the dough by generous teaspoons onto the baking sheets, spacing about 2 1/2 inches apart.

Bake

Bake one sheet at a time in the upper third of the oven for 7 to 9 minutes, until evenly deep brown with darker edges. Rotate the pan front to back halfway through baking to ensure even heating.

Cool

Slide the cookies, still on the foil, onto a wire rack. Let stand until completely cooled. Carefully peel the cookies off the foil. If cooled cookies stick, they were underbaked; return them to the oven for a few more minutes.
