Instructions
Soak the Dried Pears
In a small bowl, combine the dried pears and apple juice. Let stand at room temperature for at least 1 hour or up to 8 hours.
Make the Dough
In an electric mixer fitted with the paddle attachment, beat the butter, cream cheese, sugar, and salt on medium speed for about 1 minute until well combined. Reduce speed to low, add the flour, and mix until the dough just comes together. Scrape the dough onto a work surface and knead into a ball. Divide into 4 equal portions, flatten each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour until firm (up to 3 days).
Preheat the Oven
Adjust the oven rack to the middle position and preheat to 375°F (about 190°C). Line a baking sheet with parchment paper or aluminum foil.
Assemble the Rolls
Drain the dried pears. Take one piece of dough from the refrigerator and roll out on a floured work surface into a 9-inch round. Brush with 1½ tsp melted butter, leaving a ¾-inch border around the edges. Evenly distribute 2 tbsp pears, 2 tbsp walnuts, and ¼ cup blue cheese. Sprinkle with a pinch of black pepper. Cut the round into 8 wedges, roll each from the outer edge toward the center point, and place point-side down on the baking sheet 1 inch apart. Brush the tops of each roll with egg wash.
Bake
Bake for 18 to 20 minutes until light golden brown. Transfer to a wire rack to cool completely. Repeat with the remaining dough and filling.
