Clean the mantis shrimp (first rinse the purchased shrimp, then trim off the long whiskers and excess parts, use a toothpick to pick out the shrimp intestine at the second joint, rinse the cleaned shrimp again and set aside)

Prepare the seasonings

Put water in the pot, add the mantis shrimp, add salt, cooking wine, dried chili peppers, sliced ginger and garlic, and scallion knots, bring to a boil, cook until the mantis shrimp changes color and is cooked through, then remove (about 5 minutes)

Serve the mantis shrimp in a dish
