Boneless Kelp and Pork Bone Soup

Story

This simple, hearty soup makes great use of pork bones by extracting the meat after boiling and pairing it with rehydrated kelp. A pressure cooker helps tenderize the bones quickly, while classic aromatics add depth to the broth.

Ingredients

Pork bones as needed
Water as needed
Cinnamon stick small piece
Star anise 1-2 pieces
Ginger slices
Dried kelp as needed
Salt to taste
Green onion for garnish
Chicken essence or MSG optional

Instructions

1

Prepare ingredients

Soak the dried kelp until soft, then clean thoroughly and cut into chunks. Set aside.

2

Cook the pork bones

Place the pork bones in a pressure cooker. Add enough water to cover, along with the cinnamon stick, star anise, and ginger slices. Cook for about 40 minutes.

3

Shred the meat

Once cooked, remove the bones from the pot. Strip the meat from the bones and return the meat to the broth.

4

Finish the soup

Add the prepared kelp and salt to the pot. Cook for another 10 minutes. Finally, stir in the green onion and chicken essence to taste before serving.
