Prepare ingredients
Soak the dried kelp until soft, then clean thoroughly and cut into chunks. Set aside.
Cook the pork bones
Place the pork bones in a pressure cooker. Add enough water to cover, along with the cinnamon stick, star anise, and ginger slices. Cook for about 40 minutes.
Shred the meat
Once cooked, remove the bones from the pot. Strip the meat from the bones and return the meat to the broth.
Finish the soup
Add the prepared kelp and salt to the pot. Cook for another 10 minutes. Finally, stir in the green onion and chicken essence to taste before serving.
