Braised Beef with Ginkgo Nuts

Ingredients

Beef (washed, cut into 4 cm cubes) 750 g
Green onion (cut into chunks) 50 g
Ginkgo nuts (peeled, briefly passed through oil then soaked in boiling water and rubbed with cloth to remove tender skin) 250 g
Ginger (sliced or cut into chunks) 50 g
Soy sauce 50 g
Sugar (10 g for caramelizing, 10 g for braising) 20 g
Starch (mixed with water for thickening) 10 g
MSG 3 g
Fine salt 3 g
Soybean oil (a small amount used for stir-frying) 40 g

Preparation

Wash the beef and cut it into 4 cm cubes.

Preparing the Ginkgo Nuts

Peel the ginkgo nuts, briefly pass the kernels through hot oil, remove them, then place them in boiling water and rub off the tender skin with a cloth.

Stir-frying and Braising

Heat the wok over high heat and add a small amount of oil. Add 10 g of sugar and stir-fry until it turns red, then add the beef cubes and stir-fry briefly until the caramel color coats the meat evenly. Pour in boiling water to just cover the beef, then add the ginkgo kernels, the remaining 10 g of sugar, the green onion chunks, and the ginger chunks. Bring to a boil over high heat, then reduce to low heat and simmer until the beef is tender and soft.

Thickening

Discard the green onion chunks and ginger chunks. Mix the starch with water and pour it into the wok to make a thin sauce, then serve.
