Braised Chicken with Dried Bamboo Shoots

Ingredients

Dried bamboo shoots (soaked, torn into strips, cut into small pieces) to taste
Chicken (washed, cut into small pieces) to taste
Sichuan peppercorns (for stir-frying until fragrant) to taste
Scallion, ginger, garlic (for stir-frying until fragrant) to taste
Cooking wine (to remove odor) to taste
Doubanjiang (for seasoning) to taste
Light soy sauce (for seasoning) to taste
Salt (for seasoning) to taste
Sugar (for seasoning) to taste

Instructions

Prepare ingredients

Tear soaked dried bamboo shoots into strips and cut them into small pieces. Wash the chicken and cut it into small pieces.

Stir-fry until fragrant

Heat oil in a pan, add scallion, ginger, garlic and Sichuan peppercorns, stir-fry until fragrant. Then add the chicken and cooking wine, stir-fry until the chicken changes color.

Add dried bamboo shoots

Add doubanjiang and the prepared dried bamboo shoots, continue to stir-fry evenly.

Simmer

Add light soy sauce, salt, sugar, and an appropriate amount of water. Bring to a boil over high heat, then simmer over low heat for half an hour before serving.
