Braised Chicken with Straw Mushrooms

Prepare Ingredients
Soak straw mushrooms in hot water for 30 minutes, drain, wash, and cut into fine strips; remove tendons and fascia from chicken, wash, cut into large pieces, then chop into small pieces.
Marinate Chicken Pieces
Add soy sauce, sesame oil, chili powder, and ground pepper to a ceramic bowl, mix well, then add chicken pieces, mix thoroughly by hand, and marinate for 30 minutes to let the flavors absorb.
Sear and Braise Chicken
Heat a wok, add soybean oil, and when the oil reaches about 50% heat, add chicken pieces and stir-fry over medium heat until they turn golden brown. Soak the cut straw mushroom strips in half a cup of water, then pour the mushrooms along with the marinade liquid into the wok, cover the lid, and braise for 20 minutes until the chicken is fully tender.
Add Accompaniments
Peel and wash the onion, first cut into 8 pieces, then cut into two sections, and tear into individual slices; cut the winter bamboo shoots into squares first, then slice into thin pieces; peel and wash the scallion, chop both the white and green parts into fine pieces, add them to the braising pot with the chicken and straw mushrooms, braise for another 2 minutes, sprinkle with roasted sesame seeds, and serve.
