Braised Dog Meat

Ingredients

Cooked dog meat (skinned, cut into domino-shaped pieces) 250 g
Potato (peeled, washed, cut into rolling chunks) 250 g
Dog bone broth 150 ml
Red sauce (homemade) 50 g
Soy sauce 15 g
Cooking wine 15 g
Starch (for thickening) 15 g
Sesame oil (actual consumption 50 g) 500 g
MSG 2.5 g
Fine salt 10 g
Star anise (for making red sauce) to taste
Scallion segments (for making red sauce) to taste
Ginger slices (for making red sauce) to taste
Bean paste (for making red sauce) to taste

Instructions

Making the Red Sauce

First, make the red sauce: Place a wok over heat, add the sesame oil, and heat until hot. Add the star anise and briefly fry, then add the scallion segments and ginger slices and briefly fry as well. Next, add the bean paste and stir-fry briefly. Pour in the cooking wine, then add the soy sauce, dog bone broth, and fine salt. Once it comes to a boil, simmer over low heat until the sauce thickens. Strain the sauce through a sieve to obtain the red sauce.

Preparing the Ingredients

Remove the skin from the cooked dog meat and cut it into domino-shaped pieces. Peel the potatoes, wash them thoroughly, and cut them into rolling chunks.

Frying the Potatoes

Reheat the wok until hot, add the sesame oil, and heat to about 70% hot. Add the potato chunks and fry until golden yellow. Remove and drain the oil, then discard any excess oil.

Braising to Finish

Clean the wok. Heat it up, then add the red sauce, dog bone broth, fried dog meat pieces, potato chunks, MSG, cooking wine, and soy sauce. Once it comes to a boil, simmer over low heat to allow the flavors to absorb. Stir in the cornstarch slurry to thicken, drizzle in a little hot oil, stir-fry evenly, transfer to a bowl, and serve.
