Braised Duck Gizzards

Thaw the duck gizzards, then scrub them thoroughly with salt.

Place the gizzards in a pot with cold water and blanch.

Prepare the spices: star anise, cinnamon bark, fennel, Sichuan peppercorns, dried chilies, and ginger.

Add the duck gizzards and spices to a pressure cooker, along with an appropriate amount of water, salt, cooking wine, light soy sauce, dark soy sauce, and rock sugar. Cover the lid, bring to pressure, cook for 15 minutes, then turn off the heat and let soak for 1 hour.
