Braised Flatfish with Mango Sauce

Ingredients

Flatfish middle section (scrubbed clean, with crosshatch cuts on both sides)
Pork tenderloin (cut into small slices)
Soaked bamboo shoot slices (cut into small slices)
Shredded scallion 5 g
Shredded ginger 5 g
Sliced garlic 5 g
Cilantro (washed, cut into small segments) 5 g
Mango sauce 1 cup
Cooking oil 1/5 cup
Sesame oil a pinch

Instructions

1

Prepare ingredients

Scrub the flatfish middle section clean and make crosshatch cuts on both sides; cut the pork tenderloin into small slices; cut the soaked bamboo shoots into small slices; wash the cilantro and cut into small segments.

2

Pan-fry the fish

Heat cooking oil in a pan, place the fish in and fry until both sides are golden brown, then remove.

3

Stir-fry and build the braising liquid

Add another 1 tbsp of oil to the pan; when hot, add the shredded scallion, shredded ginger, and sliced garlic and stir until fragrant. Add the pork slices and stir-fry until they change color. Pour in the mango sauce, bring to a boil, then add the fish and soaked bamboo shoots. Cover with a lid.

4

Braise and finish

Simmer over low heat for about 10 minutes. When the sauce has reduced, transfer to a serving plate, sprinkle with the cilantro, and drizzle with sesame oil to serve.
