Braised Frozen Tofu

Ingredients

Frozen tofu (cut into chunks) 350 g
Shiitake mushrooms (soaked until soft, stems removed, halved) 10 g
Enoki mushrooms (roots trimmed, blanched in salted water, drained) 75 g
Snow peas (strings removed from both sides, washed) 75 g
Cornstarch (for slurry) to taste
Cooking oil 25 g
Oyster sauce 1/2 tbsp
White pepper 1 tsp
Sugar 1/2 tsp

Instructions

Step 1

Cut the frozen tofu into chunks. Soak the shiitake mushrooms until soft, remove the stems, and halve them. Trim the roots off the enoki mushrooms, blanch them in salted water, and drain. Remove the tough strings from both sides of the snow peas, wash them, and set aside.

Step 2

Heat the oil in a pan. Sauté the shiitake mushrooms first, then add the enoki mushrooms and frozen tofu pieces along with the oyster sauce, white pepper, and sugar. Bring to a boil, then reduce to low heat and let it simmer so the flavors are absorbed.

Step 3

Add the snow peas just before finishing, then thicken the sauce with a cornstarch slurry. Once the sauce has thickened, turn off the heat and transfer to a serving plate.
