Braised Lamb with Radish

Story

This dish is a classic example of Chinese home-style cooking where simple ingredients come together to create something greater than the sum of its parts. The radish becomes melt-in-your-mouth tender while soaking up all the savory lamb flavor.

Ingredients

radish 1 medium, peeled and sliced into half-moons
cooked lamb 200g, sliced or shredded
garlic stalks 3 stalks, cut into 2-inch pieces
cooking oil 2 tablespoons
water 500ml
salt to taste

Instructions

Sauté the radish

Heat oil in a wok or deep pan over medium-high heat. Add the radish slices and stir-fry for 2-3 minutes until they start to soften and pick up a little color.

Simmer the radish

Pour in the water and bring to a gentle boil. Reduce heat to medium-low and let the radish cook for about 10-12 minutes until it becomes very tender when pierced with a fork.

Add lamb and garlic

Gently add the cooked lamb slices and garlic stalk pieces to the pot. Stir carefully to distribute everything evenly. Let it come back to a simmer and cook for another 3-4 minutes.

Season and serve

Taste the broth and adjust with salt as needed. The dish should have a light, savory broth. Serve hot in deep bowls, spooning some broth over the ingredients.
