Story

These crispy chicken bites combine the numbing heat of Sichuan pepper with smoky BBQ flavors. The key is getting the coating crispy while keeping the chicken juicy inside.

Ingredients

chicken breast 300g, diced into small cubes
Sichuan pepper powder 1 teaspoon
black pepper 1/2 teaspoon
BBQ seasoning 1 tablespoon
chili powder 1 teaspoon
salt 1/2 teaspoon
egg white 1 large
cornstarch 3 tablespoons
breadcrumbs 1 cup
vegetable oil for deep frying

Season the chicken

Place the diced chicken in a bowl. Add Sichuan pepper powder, black pepper, BBQ seasoning, chili powder, and salt. Toss until every piece is evenly coated with the spice mixture.

Coat with egg and starch

Add the egg white and cornstarch to the seasoned chicken. Mix thoroughly until a slightly sticky coating forms on each piece. Let marinate for 20 minutes at room temperature.

Bread the chicken

Spread breadcrumbs on a plate or shallow dish. Working in batches, roll each marinated chicken piece in the breadcrumbs until well coated. Press gently to adhere.

Fry until golden

Heat about 2 inches of oil in a deep pan or pot to 350°F (175°C). Carefully add breaded chicken pieces in a single layer, frying in batches if needed. Cook for 3-4 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
