This simple mushroom dish showcases how a few basic ingredients can come together to create something delicious. The key is to get a nice sear on the mushrooms while keeping the vegetables crisp-tender.

Ingredients

cremini or button mushrooms 250g
bok choy hearts 150g
red bell pepper 1 small
vegetable oil 2 tablespoons
salt to taste
chicken powder or msg 1/2 teaspoon
water 2-3 tablespoons

Prep your vegetables

Cut the mushrooms into thick slices, about 1/4 inch thick. Trim the bok choy hearts and cut them in half lengthwise. Slice the bell pepper into thin strips.

Sear the mushrooms

Heat oil in a wok or large skillet over medium-high heat. Add mushrooms in a single layer and let them cook without stirring for 2 minutes until golden on the bottom. Then toss and cook another 2 minutes until they release their moisture and brown nicely.

Add vegetables and finish

Add the bok choy and bell pepper to the pan. Stir-fry for 2-3 minutes until the greens are bright green and slightly softened but still crisp. Season with salt and chicken powder, add a splash of water, and toss everything together. Serve immediately.
