Braised Oyster Mushrooms

Ingredients

Fresh oyster mushrooms 500 g
Lard 35 g
Soy sauce 20 g
Cooking wine 15 g
Fine salt 2 g
Ground white pepper 0.5 g
MSG 1 g
Garlic (peeled and sliced) 35 g
Water starch slurry 25 g
Broth (or water) to taste

Instructions

1

Prep and Blanch

Trim away the tough stems from the oyster mushrooms and slice them into bite-sized pieces. Peel the garlic and slice it, then set aside. Drop the mushrooms into boiling water for a brief blanch, remove, and set aside.

2

Cook

Place a wok over high heat, add the lard, and let it melt. Add the garlic slices and stir-fry until fragrant, then pour in the cooking wine, soy sauce, and broth (or water). Add the oyster mushrooms, salt, and MSG, and bring to a boil. Lower the heat and simmer gently until the mushrooms are cooked through. Thicken with the water starch slurry, transfer to a plate, and serve.
