Wash the pork ribs, blanch in boiling water, then wash with warm water and set aside;

Prepare the green onion, ginger, garlic, and star anise;

Chop the green onion and ginger;

Heat the wok, add oil and rock sugar, and slowly melt the sugar over medium heat until small bubbles appear;

Add the pork ribs and stir-fry quickly;

After the ribs are evenly colored, add the garlic cloves and stir-fry;

Add dried chili peppers; skip if you don't eat spicy food;
