Braised Pork Ribs with Quail Eggs
Quail eggs are rich in nutrients and contain many essential elements beneficial to the body. They are also considered good for the brain. Simply braised with pork ribs, this dish is exceptionally delicious and perfect for all ages.

Step 1
Buy pork ribs from the supermarket. Soak them to remove blood, wash thoroughly, place in a pot with cold water, add cooking wine and blanch.

Boil the quail eggs, peel them, and set aside.
Step 3
Heat oil in a pan to medium heat, then add the quail eggs.
Step 4
Fry over high heat until the quail eggs develop a blistered, tiger-skin-like texture.
Step 5
Remove the fried quail eggs and set aside.
Step 6
Leave some oil in the pan. Add scallion, ginger, and garlic, stir-fry until fragrant.
Step 7
Add the blanched ribs. Stir-fry to evaporate any excess moisture from the ribs.
Step 8
Add Pixian doubanjiang.
Step 9
Add light soy sauce and dark soy sauce. Stir-fry quickly to combine evenly.
Step 10
Pour in enough stock to just cover the ribs. Bring to a boil over high heat.
Step 11
Add sugar and five-spice powder. Turn to low heat and simmer for one hour.
Step 12
Remember to stir occasionally to prevent the sauce from burning.

Turn up the heat to high. Add oyster sauce.

Reduce the sauce over high heat, add the fried quail eggs, and stir-fry evenly.
Step 15
When the sauce has reduced sufficiently, add chicken powder.

Sprinkle with scallions. The dish is especially delicious.
