Ingredients
Instructions
Step 1
Sauce ingredients: 1 box fermented bean curd, 1 box fermented bean curd, 3 bottles seafood sauce, 1 bottle red fermented bean curd, 50 g chili oil, 50 g shrimp oil, 1 bottle Shaoxing wine, 400 g rock sugar, 1 bottle light soy sauce, 12.5 kg light broth, 50 g red yeast rice, 1 bottle pork rib sauce, 100 g chicken powder. Preparation
Step 2
Crumble the fermented bean curd and red fermented bean curd
Step 3
Take a clean pot, add chili oil and shrimp oil. When the oil is 60% hot, add all the sauces and red yeast rice, stir-fry over low heat for 3 minutes until fragrant. Add light broth, Shaoxing wine and light soy sauce, simmer over low heat for 15 minutes. Add chicken powder and stir well to combine. Preparation method
Step 4
Cut the pork belly into 0.3 cm thick slices. Soak the sea cucumber until fully rehydrated and set aside. Soak the fragrant rice straw in boiling water until soft.
Step 5
Place a clean pot on the stove. Put the sliced pork belly into the braised pork sauce, add an appropriate amount of water to submerge the pork. Bring to a boil over high heat, then braise over low heat for about 20 minutes. Remove the pork slices, wrap the sea cucumber inside each slice, and tie securely with the rice straw.
Step 6
Blanch the braised pork rolls in boiling second stock briefly: this adds a base flavor and removes excess moisture from the sea cucumber. Then return them to the original braising sauce, simmer over low heat for about 3 minutes, take out and arrange on a plate.
Step 7
Place a pot on the heat, take 150 g of the original braised pork sauce, season to taste, thicken with cornstarch, then pour the sauce over the sea cucumber rolls.
Step 8
Blanch the broccoli, add it to the plate as a garnish, and serve.
