Braised Tofu in Savory Soy Sauce

Story

This home-style dish transforms plain tofu into a flavorful delight. Briefly soaking the tofu in salt water helps it firm up and hold its shape during cooking, while the spicy bean sauce adds a deep, savory umami kick.

Ingredients

Firm tofu 1 block (approx. 400g)
Cooking oil 2 tbsp
Scallions (white parts) 2 stalks, chopped
Fresh ginger 1 slice, minced
Spicy soybean paste (doubanjiang) 1 tbsp
Sugar 1 tsp
Light soy sauce 1 tbsp
Water or stock 100 ml

Prepare the Tofu

Slice the tofu block into even pieces about half an inch thick. Submerge the slices in a bowl of lightly salted water and let them soak for 10 minutes to firm up the texture.

Sear Aromatics and Tofu

Heat oil in a wok or frying pan over medium heat. Add the chopped scallions and ginger, stir-frying until fragrant. Gently place the drained tofu slices into the pan and pan-fry for a few minutes until the surfaces are slightly golden.

Braise the Dish

Stir in the spicy soybean paste and sugar to coat the tofu. Pour in the light soy sauce and water, ensuring the liquid covers the bottom of the pan. Simmer gently for 5-8 minutes, allowing the sauce to reduce and thicken slightly.

Serve

Transfer the braised tofu to a serving plate, spooning the thickened sauce over the top. Garnish with sliced scallion greens if desired.
