Braised Turtle Eggs

Ingredients

Turtle eggs (boiled in water, water changed and boiled again, peeled into slices and boiled again) 150 g
Finely chopped cilantro 2 g
White pepper powder 2 g

Boil the turtle eggs

Boil the turtle eggs in water, change the water and boil again. After several rounds, peel the eggs into slices and boil once more, then remove from the water.

Mix well

Place the turtle eggs and cilantro on a plate, add the salt, MSG, cooking wine, shredded scallion, and shredded ginger, and mix everything evenly. (Note: the original ingredient list calls for chopped scallion/ginger, while the steps use shredded — inconsistent.)

Braise

Place a pot over the heat, add the stock, and bring to a boil. Thicken with a clear-style starch slurry, then pour the mixed turtle eggs into the pot. Once it comes back to a boil, drizzle with the sesame oil and sprinkle with white pepper to finish. The cilantro and white pepper may also be kept off the heat and served in a small side dish at the table instead.
