Braised Winter Bamboo Shoots with Cat Meat

Ingredients

Cat meat pieces (blanched, water drained) 250 g
Winter bamboo shoots (cut into olive-shaped pieces and blanched) 200 g
Wet dried tangerine peel, minced 1 tsp
Minced ginger 2.5 tsp
Minced garlic 0.5 tbsp
Dark soy sauce 0.5 tbsp
Wet cornstarch slurry 0.5 tbsp
Ginger wine 0.5 tbsp
Fine salt 5 tsp
MSG (monosodium glutamate) 2 tsp
White pepper powder 1 tsp
Sesame oil 1 tsp
Secondary stock (light stock) 2 tbsp
Vegetable oil (for stir-frying) 1 tbsp

Instructions

1

Prep the Ingredients

Blanch the cat meat pieces, transfer to a bowl, and drain off the water. Cut the winter bamboo shoots into olive-shaped pieces and blanch them.

2

Braise the Dish

Heat oil in a wok to about 20% hot. Add the minced garlic, minced ginger, minced wet tangerine peel, and the blanched cat meat pieces, and stir-fry until fragrant and cooked through. Add the ginger wine and stir evenly. Pour in the secondary stock, season with fine salt and MSG, and adjust the color to a golden brown with the dark soy sauce. Cover and braise until about 80% done, then add the winter bamboo shoots and toss until evenly combined. Once cooked through, sprinkle in the white pepper. Thicken with the wet cornstarch slurry, then add hot oil and sesame oil and mix evenly. Transfer to a serving plate and serve.
