Huangpu Scrambled Eggs
A classic Cantonese dish, stir-fried with eggs as the main ingredient — tender, fragrant, and silky smooth.
Ingredients
shelled eggs
250 g
fine salt
2 tsp
MSG
1 tsp
cooked lard
350 g
Instructions
1
Prepare the egg batter
Whisk the MSG, fine salt, and cooked lard into the beaten eggs until you have a smooth, uniform egg batter.
2
Stir-fry
Place a clean wok over medium heat. Swirl a little oil around the inside to season it, then pour the oil back into its container. Add 0.5 tbsp of fresh oil and pour in the egg batter. Stir continuously with a spatula while drizzling in more oil as needed, and cook just until the eggs are set. Transfer to a plate and serve.
