Breaded Chicken Cutlet

Ingredients

Chicken breast (split in half, scored on both sides and sliced, marinated with salt, cooking wine, sliced scallion and ginger for about 30 minutes) 250 g
breadcrumbs 300 g
cooking wine 2 g
salt 3 g
sliced scallion 2 g
sliced ginger 2 g
beaten egg 6 g
oil (for frying) 80 g
cornstarch to taste

Instructions

Step 1

Slice the chicken breast in half, score both sides and cut into slices. Marinate with salt, cooking wine, sliced scallion and ginger for about 30 minutes. Dredge each piece in beaten egg, cornstarch, then breadcrumbs, pressing firmly.

Step 2

Heat oil in a pan to 80% heat. Add the prepared chicken cutlets and fry until golden brown. Remove from the pan and serve.
