Cantonese Mooncake Red Bean Paste Filling

Cantonese Mooncake Red Bean Paste Filling

Ingredients

Red beans (washed and soaked) 500 g
Water 2500 g
Fine granulated sugar 300 g
Osmanthus jam 10 g
Alkali 1 g
Raw oil (heated to 180°C) 100 g

Step 1

Wash the red beans and soak in water for 1-2 hours.

Bring to a boil over high heat.

Add the alkali and reduce to low heat. Simmer until the beans are soft.

Pass the cooked bean paste through a sieve to remove the skins.

Place peanut oil in a pan and heat to 180°C. Add the fine sugar and stir until melted, then add the bean paste and osmanthus jam. Stir-fry until the moisture evaporates and the mixture turns reddish-brown. Remove from heat and let cool.
