Caramel Lace
Pour the syrup into the bottom of a mold to form a lace-like net; once hardened, use it to cover desserts.
Ingredients
sugar
300 g
water
300 g
glucose
40 g
Instructions
1
Cooking the Sugar
Combine the sugar, water, and glucose to make a syrup. Heat to 160°C, then immediately place the bottom of the pot in cold water to stop the heating. Remove and let stand for 2-3 minutes to thicken.
2
Preparing the Mold
Lightly oil the bottom of a soup ladle or other mold surface.
3
Making the Lace Web
Wear rubber gloves for heat protection. Use a spoon or the tip of a knife to dip into the syrup and drizzle lace-like web patterns onto the bottom of the mold.
4
Demolding
Trim away any excess sugar threads, let stand for 2 minutes to harden, then carefully remove.
