Caramel pears are a simple yet elegant warm dessert that showcases the natural sweetness of ripe pears. Slices or chunks are gently sautéed in butter with sugar, allowing the fruit to soften while the sugars develop into a rich, golden caramel. The result is a tender, glossy dish with deep caramel notes that balance beautifully with the mellow juiciness of the pear, often served warm with a drizzle of the pan sauce.

Pear (ripe) 8
Butter 2 oz
Fine granulated sugar 4 oz

Step 1

Peel, core, and cut the pears into four pieces.

Heat butter in a pan. Add the pears and sugar. Pan-fry over medium heat; the pears release juice that combines with the sugar to form a syrup. Continue heating, turning and basting the pear pieces, until the syrup reduces and thickens, and the pear pieces turn a light caramel color. The syrup will turn light brown; do not aim for dark brown, or the fruit will overcook.
