Caramelized Onion Walnut Focaccia

Caramelized Onion Walnut Focaccia

Ingredients

Water 3/4 cup (1.5 lb) / 1 cup (2 lb)
Vegetable oil 1/4 cup (1.5 lb) / 1/3 cup (2 lb)
Bread flour 3 cups (1.5 lb) / 4 cups (2 lb)
Salt 3/4 tsp (1.5 lb) / 1 tsp (2 lb)
Active dry yeast or bread machine yeast 1 tsp (1.5 lb) / 1 1/4 tsp (2 lb)
Margarine or butter (for topping) 2 tbsp (1.5 lb) / 3 tbsp (2 lb)
Onion (halved and thinly sliced) 4 (about 4 cups) (1.5 lb) / 5 (about 5 cups) (2 lb)
Sugar (for onions) 1 1/2 tsp (1.5 lb) / 2 tsp (2 lb)
Walnuts or pine nuts (coarsely chopped) 1/3 cup (1.5 lb) / 1/2 cup (2 lb)

Dough Preparation

Choose recipe size. Add the first 5 ingredients to the bread machine following the manufacturer's instructions. Select the 'dough' cycle. When the cycle ends, remove the dough, deflate it, cover, and let rest for 10 minutes.

Shaping

Grease an 11- or 12-inch pizza pan (use a 13- or 14-inch pan for the 2 lb recipe). Place the dough and pat it with your hands into an even circle slightly smaller than the pan. Poke holes all over the surface with your fingertips. Cover and let rise in a warm place for 30 minutes.

Making Caramelized Onions

Melt the butter in a heavy-bottomed pan. Add the onions, cover, and cook over medium-low heat for about 15 minutes until softened and golden, stirring occasionally. Sprinkle in the sugar and continue cooking uncovered for 10-15 minutes until caramelized, stirring occasionally.

Baking

Bake the dough in a 425°F (about 220°C) oven for 7-10 minutes until lightly golden. Remove and top with the onion mixture, sprinkle with the nuts. Continue baking for 10 minutes. Cut into pieces and serve warm. Leftovers can be frozen.
