Celery (remove roots and leaves, wash, smash with a knife, cut into 6 cm strips)
300 g
Pork floss
50 g
Rendered lard
50 g
Fine salt
3 g
MSG
1 g
Sesame oil (for drizzling)

Instructions
1
Prepare the celery
Remove the roots and leaves from the celery, wash it, smash it lightly with the flat of a knife, then cut it into 6 cm long strips.
2
Stir-fry the pork floss
Heat a wok over high heat, add a small amount of oil, and stir-fry the pork floss. Once it is just cooked through, transfer it to a plate and set aside.
3
Stir-fry the celery
Add a little more oil to the wok and heat until hot. Add the celery and stir-fry until nearly done, then add the pork floss, fine salt, and MSG. Drizzle in the sesame oil and toss to combine before serving.
