Cheddar Twice-Baked Potatoes

Cheddar Twice-Baked Potatoes

Ingredients

russet potatoes 6 large
heavy whipping cream 2/3 cup
shredded cheddar cheese (divided) 1 cup (4 ounces)
fresh mushrooms (chopped) 1/4 cup
garlic salt 1/2 to 1 teaspoon
dried basil 1/2 teaspoon
dried oregano 1/2 teaspoon
bacon strips (cooked and crumbled, divided) 4

Bake potatoes

Bake potatoes at 375° for 1 hour until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a 1/4-inch shell; set shells aside. Place pulp in a mixing bowl; add cream and mash.

Mix filling

Stir in 3/4 cup cheese, mushrooms, garlic salt, basil and oregano. Reserve 2 tablespoons of bacon; stir remaining bacon into the potato mixture.

Stuff and cook

Spoon into potato shells. Top with remaining cheese and bacon. Microwave uncovered on high for 5-8 minutes, or bake uncovered at 375° for 25-30 minutes, until potatoes are heated through.
