Cheese Filling (for Fruit-Filled Rolls)

Ingredients

baking cheese 2 lb (1200 g)
butter, softened at room temperature 8 oz (300 g)
sugar 10 oz (360 g)
cake flour 3 oz (90 g)
salt 0.5 oz (15 g)
vanilla extract 0.5 oz (15 g)
lemon zest, finely grated 0.25 oz (8 g)
eggs 6 oz (180 g)
sour cream 8 oz (240 g)
raisins 8 oz (240 g)

Instructions

1

Step 1

Combine the cheese with the room-temperature butter and beat with a paddle attachment on low speed until smooth.

2

Step 2

Add the sugar, flour, salt, vanilla extract, and lemon zest. Mix on low speed until just smooth and fully combined. Do not incorporate too much air, as the filling will expand during baking and could cause the pastry to crack.

3

Step 3

Add the eggs a little at a time on low speed, mixing well between each addition. Fold in the sour cream.

4

Step 4

Fold in the raisins.
