Cheese-Stuffed Potato Bowls

Cheddar cheese, also known as Cheddar, is the familiar yellow cheese often seen in cartoons and the yellow cheese slice in McDonald's burgers. It is highly versatile and can substitute for almost any other cheese. RICOS Concentrated Cheddar Cheese Sauce offers another form alongside cheese slices and shredded cheese, and can be used in place of sliced or shredded cheese. It works well for burgers, pizza, fries, and pasta sauces.

Cheese-Stuffed Potato Bowls

Ingredients

baby potatoes 500g
mozzarella cheese 100g
black pepper to taste
cilantro to taste
salsa to taste
olive oil to taste
black beans 425g
condensed cheddar cheese sauce 200g
chopped green onions to taste
sour cream to taste
salt to taste

Instructions

Step 1

Preheat the oven to 160°C (320°F). Wash the potatoes, poke them several times with a fork, and toss with olive oil and salt. Bake for 45 minutes. Finely chop the green chili peppers and set aside.

Soak the black beans in water for 4 hours, then drain. Add the RICOS condensed cheddar cheese sauce, green chili, black pepper, and salt, and mix well.

Remove the potatoes from the oven, let them cool, cut them in half, and scoop out the centers.

Fill the potato bowls with the black bean mixture, sprinkle with shredded mozzarella cheese, and bake for 5 minutes.

Remove from the oven, drizzle with sour cream, season with salsa, and garnish with chopped green onions and cilantro.
