Ingredients

salmon fillet 200g
dry white wine 3 tablespoons
lemon half, juiced
black pepper freshly cracked
salt to taste
waxy potatoes 4 medium
streaky bacon 4 slices
butter for greasing
olive oil 2 tablespoons
cheddar cheese 100g, grated
green onions 2 stalks, chopped

Instructions

Marinate the salmon

Cut the salmon into bite-sized pieces. Place in a bowl and toss with white wine, a generous grinding of black pepper, salt, and the lemon juice. Let it sit for 15 minutes while you prep the other ingredients.

Cook the potatoes

Peel the potatoes and cut into large chunks. Drop into a pot of salted boiling water and cook for about 15 minutes until a fork slides in easily but the pieces still hold their shape. Drain and let cool slightly, then cut into smaller bite-sized chunks.

Prepare the toppings

Chop the bacon into small fragments. Grate the cheddar cheese finely. Trim and slice the green onions.

Preheat your oven to 200°C (400°F). Butter the bottom of a baking dish. Arrange the potato chunks in an even layer, then scatter the bacon pieces over top.
