Ingredients

eggs 3 large
salt a pinch
vegetable oil 1 tablespoon
green onions, chopped 1 tablespoon (optional)

Instructions

Beat the eggs

Crack the eggs into a bowl and beat them with a fork until the yolks and whites are fully combined. Add a pinch of salt and mix well.

Heat the pan

Place a non-stick pan over medium-low heat. Add the vegetable oil and let it warm up for about 30 seconds.

Cook gently

Pour in the beaten eggs. Let them sit for about 20 seconds, then gently push the edges toward the center with a spatula. Continue folding and turning until the eggs are just set but still slightly wet. Remove from heat immediately.

Serve

Transfer to a serving plate and sprinkle with chopped green onions if desired. Serve right away while hot and fluffy.
