This classic Chinese baby food recipe transforms simple ingredients into a silky smooth porridge that little ones love. The slow cooking method breaks down the rice completely, making it gentle on developing tummies.

Ingredients

long-grain rice 1/2 cup
carrot 1 small, finely diced
bok choy 2 leaves, finely chopped
water 4 cups

Instructions

Rinse the rice

Place the rice in a fine mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch for a lighter congee.

Add rice and water to pot

Transfer the rinsed rice to your electric slow cooker or stew pot. Pour in the fresh water and give everything a gentle stir.

Prepare the vegetables

While the pot is heating, wash the carrot well and cut into very small dice. Wash the bok choy leaves and chop them finely, almost to a mince.

Cook the congee

Select the baby congee or porridge setting on your appliance. Close the lid and let cook for about 1 hour until the rice has completely broken down into a creamy consistency.

Add vegetables

About 10 minutes before the congee finishes, stir in the diced carrot. Add the chopped bok choy in the last few minutes to keep it bright and tender.
