Story

This corn porridge is a staple comfort food in many Chinese households. Using crushed corn (often called corn grits or broken corn) allows the texture to release starch quickly, creating a thick, creamy consistency without needing long hours of simmering. The addition of rock sugar adds a gentle sweetness that makes it suitable for breakfast or a light dessert.

Ingredients

Crushed corn (corn grits) as needed
Rock sugar to taste
Water as needed

Instructions

1

Prepare Ingredients

Gather the crushed corn and an appropriate amount of rock sugar.

2

Wash the Corn

Place the crushed corn into a basin and rinse it thoroughly with water.

3

Combine in Pot

Transfer the washed corn into a small milk pan or saucepan. Add the rock sugar to the pot along with the corn.

4

Cook the Porridge

Add water to the pot. Bring to a boil over high heat. Once boiling, reduce to low heat and simmer gently for about 10 minutes until the corn is soft and the liquid thickens.

5

Serve

Remove from heat. The soft, sweet, and fragrant corn porridge is ready to be served.
